I've successfully profiled LightJets before. It sounds like they simply
are not using ICC color management. The fact that they asked for a
ColorMatch image is a cop-out. That tells me that they have a rough
match to press output, but this only means they have "dialed-in" red,
green and blue exposure to get close to a press proof. That's not
really color management. That's just the settings that they have
decided to calibrate to.
It also sounds like their ability to repeat a particular calibration is
not very good. Ask if they are Q-Lab certified (assuming they are also
a photo lab). There can be a lot of variation in the development of the
photographic process if it is not tightly controlled. Ask to see their
control strips if they will let you...
These are just guesses. There are many other factors that could cause
the problem, but profiling a LightJet is definitely possible, and in
fact results can be excellent.
I'd try another lab next time.
