When Printer Color Management is selected, Photoshop sends the data
and the profile that describes the data. It looks like the Epson
driver is doing something to the data based on the profile. The
reliable option for just printing the numbers in the chart is Same as
Source-that just sends the data.
I've never been able to asociate custom profiles with the printer at
the OS level and get the driver to use them correctly, on either OS,
though it should in theory be possible.
On Mac OS, the paper-specific profiles are actually buried in the
Epson driver. The driver selects the appropriate profile based on the
media settings in the driver. I haven't looked at the WIndows
behavior at all closely but I suspect that a similar arrangement
exists there.
On Mac OS, I create the profile by printing from Photoshop using (in
that old version) Same as Source, selecting the appropriate media
setting in the driver, then setting driver color management to "No
Color Adjustment." (You MUST do them in that order-if you change the
media setting, No Color Adjustment gets turned off.)
To actually make prints using the profile, I let Photoshop do the
conversion on the print stream by choosing the printer profile in the
Print with (Hopelessly Inaccurate) Preview, then appropriate media
settings and No Color Adjustment in the driver.
Other paths should, and may, work, but this one is pretty bulletproof.
