which Delta E?
The math behind it is not really complicated if DE76 is needed. For more sophisticated formulas like DE2000, I'd recommend an iterative approach (have written something alike for DE2000 in R).


which software?
I'd recommend Graeme Gill's icclu or the Gretag/Xrite ColorPicker.

how many pieces?

If it's a short run, I'd use a proofing system to print it.

If the needs for the *absolute* deviance are not too tight (if you just want to illustrate the Deltas), I think there is no problem to print it on a offset press.
