Why is "U.S. Sheetfed Coated v2" turning my K only values into a

It's not the "U.S. Sheetfed Coated v2" profile that's doing this,
it's your destination profile in the Fiery that's the cause of this
and, in fact, this is normal for a standard ICC conversion. The only
way to avoid this is through some option, if it has it, in your RIP
to preserve K only values. The other option, again if your RIP
supports it, is to use a device link profile that's set to preserve K.
As far as the 3% threshold, it could simply be a limitation of your
toner device. The only way to tell would be to disable color
management and print a step wedge and see if you get values below 3%.
If you do, it's possible that your destination is not correctly
characterizing your device or your device needs re-calibrated/
linearized. Re-profiling your device could resolve this. If you do
that, you could build a profile with the maximum amount of GCR that
would help to preserve as much black as possible if you don't have
the option to explicitly preserve K.
