Color management is still important to Apple. We may not put as much marketing effort into it as we used to due to our product line broadening, but we do continue to try to improve the technology itself and its use in MacOSX.
Some problems with color management are related to third party applications, printing, and third party drivers. We try to fix these kinds of issues if there is something we can do about them. The problem with printing from Photoshop to Epson printers is fixed in 10.6.3 which became available a few days ago. It was a complex issue involving both Photoshop and the new Epson drivers. It was worked around by a change in printing, and the next version of Photoshop will include a fix for it too.
If you encounter a problem you think we don't already know about, the best way to get it fixed is to file a bug report describing the issue. Here's the link:

To do that you need to register as a developer, which is free. Read the guidelines for creating bug reports. Basically you should include a series of steps necessary to trigger the bug, what application you're using, what version of MacOSX you're running, a description of what is going wrong, and a description of what you had expected to happen instead.
