Could 10.6.2 be part of the problem? Also possibly the driver version? I recently did a round or re-profiling some Epson printers using EyeOne Match 3 and CS5. I was running 10.6.3 (now 10.6.4) and I'm not seeing what you describe. I'm also running drivers downloaded from the Epson Europe site which are (or were as of a few weeks ago) different from what the US site offers. I'm working with 9600, 9800, 9900 and 4800 printers.
I started 10.6 life at 10.6.3 with a recent new MacBook Pro and I thought I had read that there were some important printing/color issues resolved in the .3 release.
I went to the Euro site for printer drivers when I realized that one of my printers was not supported in 10.6 by the US site drivers (this is as of maybe a month ago). I think that was for the 9800 but I don't recall. Anyway after looking at those drivers and reading the release notes it was apparent that they were already setup to deal with many of the issues we've been having and all were supported in 10.6. I downloaded their drivers for all of my printers (Except for the 9900 they're all later versions than what the US site was offering) and they're working fine.
I'm using the assign Adobe RGB to the target and then convert to that during printing as the workaround for the targets with no color management. The applied profiles are working as well as any I built in CS3/Tiger which was the last time that all of this stuff seemed to work predictably and reliably.
