I don't know if there's a slicker way - but I just have what amounts
to an NSNotificationCenter that is also a MIDI event listener that
issues notifications to things - this makes it easy to implement MIDI
learn on various selectors.
I use SnoizeMIDI for grabbing and filtering events.

It's for a freebie- I've done a wah pedal AU that works great if
you're manipulating the slider but it would be better if it
responded to a MIDI controller.
