I'd start a beginner off by encouraging them to write something that simply plays audio files using QuickTime.... you get a quick hit of success for not too much effort; can elaborate your simple player with level meters and so on. By the time you reach QT's limits and need to trade up to CoreAudio, you've got some basic concepts down and it won't be such a leap. But of course it depends on what he ultimately intends to do: it is performance, software engineering, or what....
