Ok, I'm stuck with the *excellent* stereo output of the Mac ;-)
You're not really stuck with the stereo output. In any setup where
you have the built-in audio producing stereo, you could add a
CoreAudio-compatible interface and produce 6 or 7 outputs (or more).
The latency could easily be exactly the same when comparing built-in
to external.
While waiting for a 13-Pin input on hardware like Apogee, RME,
MotU, etc. which would be terrific for guitar, bass, violin, and more!
While that would be convenient, it is not needed. You can wire a
cable to convert from 13-pin to individual jacks that would connect
to a standard CoreAudio-compatible interface. The only missing piece
is that you have to provide voltage to the guitar or violin over the
13-pin cable, and this won't happen without a little bit of custom
wiring between an adjustable power supply and the 13-pin. I have
done this between a Godin Freeway SA 13-pin guitar and the MOTU
896HD, using an adjustable power supply, and it works great for
testing my hexaphonic (6-channel) AudioUnits.
It's too bad that the RMC hardware is not available - it provides for
your jack and cable conversion needs without adding any latency.
