Parameters for AudioStreamBasicDescription

I'm new to Core Audio ... and looking for some guidance with stream formats.

If I apply an AudioStreamBasicDescription stream to the mic bus on the remote IO audio unit for an iPhone, do the parmeter values I choose need to match what the 'mic' hardware is built to capture --- or do these parameters describe what I want the OS to convert that raw input into before handing it to me in a callback ... or is this not related to callbacks at all and instead refers only to connecting busses together?
