That tech note says that only AirPlay mirroring is supported in AVAudioSessionCategoryPlayAndRecord. I tried it, and sure enough, you can mirror your display to an AirPlay monitor and the output also moves to the AirPlay device, but input is unaffected. Vast improvement over iOS 6. The button, I guess is only for non-mirrored AirPlay.
