2.3.2_rc3 is a big step towards that. If you copy X11.app to
X11_other.app and edit the Info.plist to change org.x.X11 to
org.x.X11_other, you should be able to start the two separately. This
doesn't quite play nicely with the launchd DISPLAY yet (and hence why
I haven't really discussed it publicly yet). If you disable launchd
support (see the list FAQ on xquartz.macosforge.org), you should be
able to get multiple X11 servers this way.
