2.3.2_rc3 is a big step towards that. If you copy X11.app to X11_other.app
and edit the Info.plist to change org.x.X11 to org.x.X11_other, you should be
able to start the two separately. This doesn't quite play nicely with the
launchd DISPLAY yet (and hence why I haven't really discussed it publicly
yet). If you disable launchd support (see the list FAQ on
xquartz.macosforge.org), you should be able to get multiple X11 servers this
way.
Oh cool! I have run two X servers regularly in the past,
one full screen and the other rootless for applications that
open both X and Aqua windows (Matlab being the main one).
I accomplished this on Tiger by making one fink's xorg (on
screen 1) and the other the regular apple X11 (on screen 0).
So I'm very pleased to hear than X11 is close to allowing
a similar setup.
