It looks like if X11 is not already running and I invoke NoMachine, I
still get 2 instances of the X11 framework started.
However, if I start X11 manually (or open an xterm which starts X11),
then NoMachine sees the X server and does not cause another instance
to get created.
So there should be some changes to NoMachine proper as well, but I get
my preferred behavior if I remember to start X11 up first prior to
running a NoMachine client.
This works for me.

instance of X11 appears in my dock. And Activity Monitor reports
only one instance each of quartz-wm, X11 and xinit.
