If this is with ssh -X, add -Y.
If this is direct, then it sounds to me like the software is doing something
along the lines of assuming that server-side font (and image?) files
available on the server are also available on the client (I recall
Mathematica doing this); the only workaround is to copy those files onto the
Mac at whatever path the software thinks they should be. (I think I've seen
packages for that kind of thing in the Ubuntu repository recently. "Yay"
commercial software developers!)
(Actually I lie; you *could* set up a font server on the Sun, tell it about
the fonts, add it to your font path, and edit the startup script(s) for the
programs to not do the explicit font path settings. But, ew... you're well
past the point of diminishing returns unless you're setting up a resource
for students (guess my day job...).)
