Well, that's pretty much the "only" advantage to any software update ;)
GLX performance is better, multiple crashes are fixed, multiple usability bugs are fixed, and a handful of other issues are also addressed. The more visible issues made it onto the ChangeLog. Others you can see in the closed bug list:
http://xquartz.macosforge.org/trac/query?group=status&milestone=2.5.0
http://xquartz.macosforge.org/trac/wiki/X112.5.0
I think there are also a few others that were not reported in trac... having 4 different bug trackers for XQuartz (bugreport.apple.com, bugs.freedesktop.org, xquartz.macosforge.org, www.macports.org) makes exact listing difficult.

You can look at Leopard SUs and SnowLeopard for historical trends. Also keep in mind that Leopard's shipping X11 was less mature than SnowLeopard which helped justify the need to pull X11 into Apple SUs. Due to the maturity of X11 in SnowLeopard, I wouldn't expect anything major to change in the SnowLeopard SU timeframe like it did during the Leopard timeframe.

Thanks.
