Haven't noticed any untoward effects, but the Xcode opening problem
remains.
Just to make things clear, you're seeing that when you double-click an
Xcode project, Xcode launches but the project doesn't open? If so,
that's not likely to be a Launch Services problem because it's figuring
out that Xcode should launch. I'd be more inclined to suspect a rogue
Xcode plugin or something like that.
