I've been doing it successfully since at least 2005 with every release of OS X since then, including almost every developer seed. Only once did I have a bit of a problem along the lines you discuss, where some plist somewhere in ~/Library was incompatible with something else, but that was in a seed and fixed in the next seed.
I'd bet people at Apple do this quite often, with new builds of the OS always needing testing/regressing.
