As far as ~/Library/Developer/Xcode/iOS DeviceSupport/
You can delete the folders inside it that you do not want to test for. These are the different operating systems the simulator simulates. So if you are building for only iOS 7, then keep 7.1.2 in there. Toss 5.1.1 and 6.1.3 if you don’t ever care to test on them.
You can usually install a sim os using downloads under Xcode, but it usually only goes back 1 version (ie if 7 is current, only 6 will show, not 5).
