It does certainly seem a bit untidy. The advice I got from Epson was to set
the output profile from ColorSync/System Preferences. My head now hurts as
you can only set an RGB Default from here. My guess is that this is the
working profile default so bang goes Epsons advice!

The ColorSync panel's "Default Profiles" tab is functionally the same as it was on OS 9: developers must still specifically ask ColorSync what profiles are set in these pop-up menus. They aren't used automatically, even though the description for this tab states that the profiles selected here will be used "when a document does not contain embedded profiles." At some point I expect this will be true on a system wide basis, but right now it isn't.

The tip from Chris using the ColorSync Utility seems to work but its still a
real pain if using multiple media from anything other than PhotoShop. Hopefully some day Epson will unsderstand what cms is and we'll get some more options.

Printer manufacturers should register each media, so that a separate profile (manufacturer supplied or custom) can be associated with each media. The two Epson printers I have are doing thisColorSync Utility lists each media type setting that is available in the printer driver.

If you're looking for more options in the printer driver itself, I think this is going to need to come from Apple.

I also checked out Gimp Print but no mention of CS there
either.

gimp-print makes use of CUPS on OS X which is neither ICC nor ColorSync aware at the moment.
