Your PS working space is probably Adobe RGB & untagged images are treated as
if they are in your default working space, thus the tagged & untagged
versions look the same in PS. Your Preview application is making a different
assumption regarding the default profile for untagged files, thus the
AdobeRGB-tagged & untagged versions look different.
