Why wouldn't you want to edit your image while soft proofing is on? I do
this all the time and find it to be very helpful.
After correcting an image, I duplicate it on-screen side-by-side, turn
soft-proofing on for the original image, and correct it again to match the
un-soft-proofed duplicate next to it. Seems to work well.
Recently I was printing a lot of images to the same paper (with the same
profile) and made a standard soft-proof correction curves Action by
correcting a 14step grayscale, duplicated on-screen. Much easier to see
where the corrections are needed on a grayscale. Probably a terrible
technique, but it seemed to work well.
I do also make monitor profiles for different brightness/contrast levels. I
use a low level for soft-proofing (easy to switch calibration and profile
instantly on my Eizo CG210 and BasicColor 4).
