In Mac OS <X there was indeed a control panel to set a default color space to be assumed for untagged data.
I do not think it was a setting that applied system-wide, though. I think it was merely a user preference that apps could read and decide to abide to, or not, at the developer's criteria. If an app did not use that user's preference, I do not know how untagged data in them was rendered.
