QuickTime Player is the only application that comes with the system
that's recordable in any meaningful way. There are a number of
recordable third-party applications, as other people have listed.
Which would be "best" depends a bit on what you're after. Bear in mind
that AppleScript recording does not track users' precise gestures -- it
records actions that are meaningful in AppleScript, which means more
task-oriented things.

attempt to negotiate some type of special dispensation to get access
to the unpublished API's for things like Mail, iCal, or Keynote?
Chris Nebel, I'm sure he will respond, is a nice guy with helpful
attitudes.
How can I refuse after such an endorsement? :-) Joining the developer
program (see <
http://www.apple.com/developer>) is probably a good
start, but I'm not sure what you're expecting to find. Unpublished
APIs are unpublished for a reason -- you'll have to be more specific
about what it is you want.
