Chris,
Send me your images offline, so I can try to reproduce. Include precise
instructions.
Thanks,

Can't explain what you're seeing, then, since I used Preview and
performed exactly the steps you enumerated and had a profile in every
image.
I have just reproduced my original results on Mac OS X 10.3.4 on both
my laptop and desktop machines. Build is 7H63. Preview is 2.1.0
(v211).
In the case of TIFF and JPEG, no profile is embedded.
In the case of PDF and JPEG 2000, a profile is embedded, but it's a
bogus profile. Preview converted the data to monitor RGB, and then
tagged the PDF with Generic RGB, and tagged the JPEG 2000 file with
sRGB.
In all four cases, the data has been converted. Original numeric
values were not preserved.
