well, if you got a new Mac with Snow Leopard or Lion on it, X11 is installed by default, unless you explicitly disable it during the installation or remove it afterwards.
If you upgrade from Leopard to SL just install it from your SL Installation DVD.
Then Installing 'GIMP on OS X' is simply a matter of dropping it out of the dmg you've downloaded. That's all you need to do.
