That’s not what resolution independence means. I can understand why the phrase would confuse a nontechnical user (assuming your mother is nontechnical!), and that’s exactly why Apple doesn’t use it in any of its end-user UI or marketing. Instead what it offers is _scaling_ to make everything on the display bigger or smaller, to fine tune it to your eyesight and tastes.
From the user’s point of view the “resolution” of the display is always the same — it’s whatever the native DPI of the screen is, i.e. too fine to see any pixels. What they’re changing is how big everything’s drawn.
