Realistic expectations of the accuracy of camera profiles IMHO are between 6 and 20 deltaE2000; and this is not just from shooting targets, but from spectral profiling. One of the reasons is that non-uniformity of the sensors is substantial (+/-5% in my tests). Another reason why extreme accuracy (below deltaE 2) is not practical is that each lens has its own spectral characteristic, and it changes with the amount of dust and grease on the lens. Same, the air is different, and a profile that fits well a shot in a dry place at noon does not do maintain same low deltaE for a seashore sunset in hot august.
Most of the cases I saw gaps in camera colour reproduction are caused by the lack of colour discrimination. However you can always check your system by shooting an artificial rainbow.
