Another data point:
I have a 15" MBP Core 2 Duo which I bought with 2Gb. I have since
upgraded to 4Gb because I have a VMWare image that requires 2Gb
(thanks to some very memory intensive software on it). I can run
Xcode on it at the same time as the VM Ware image with no significant
performance issues, although admittedly the apps I develop tend to be
quite small.
This is the fourth Apple laptop I've owned and I have never considered
the 17" version purely on the grounds of physical size.

FWIW..
I have a Core Duo 17" MBP with 2GB and I regularly use XP in
Parallels running Visual Studio alongside XCode or Photoshop etc.
All the usual time wasting culprits are also open... Safari, Mail
etc. But I don't often use Widgets!
I developed an entire desktop app that way. It was a full blown
OpenGL analysis app for ultrasonic data.
It is not perfect with 2GB, and there are slowdowns, but the best
way around that is to have lots of swap space.
However, it is certainly not unworkable.
On my G5 I have 4GB and that flies along.
I have just ordered a new 17" with 4GB and based on my experience
the last 2 years think that will be quite comfortable.
But it will be nice to have the option to easily upgrade.
