You can use the "sample" command from a shell. I recommend opening Terminal and typing a command like:
sleep 5; sample Xcode
The sleep will give you time to switch back to Xcode before the sampling begins. If it's not enough time, use a number bigger than 5. Also, "sample" defaults to taking a longer sample than Activity Monitor does, so you have more time to reproduce the issue and a greater statistical representation of the activity. It does mean you have to keep typing or moving the cursor in Xcode for the longer sampling period, though.
